To edit the pic that appears on the outside scenery i.e. mountains, coastal. I have seen various different horizon scenery on other custom levels, so I guess it must be possible???????

Yes!its possible, I have update various horizons from TR5 on my homepage.(black island,rom, vci) I'm going to make more horizons (made by me)and put them on my homepage very soon.

You can use Strpix3 for making any.
first
Open a Wad with Strpix3, save the Textures in a bitmap, then load it in your paintprogram,
scan a picture from a horizon in your paintprogram, then cut it into the right size like the original horizon-textures in your wad,copy it over the original tiles from wad, and save it .
-open the Bitmap in strpix3 and color the horizon like you wish.
