Is there a way I could flip a switch and change regular sentry guns into a sentry gun with "1" entered into the ocb to disable the sentry gun.

I have no idea whether this is going to work, but you might try and place two sentry guns on the same square, one with OCB = 1, the other with OCB = 0. First trigger the latter, then anti-trigger it. If you want to use a switch, you'll need to activate a trigger triggerer on the anti-trigger square. It's probably a good idea to trigger the sentry gun with OCB = 1 after the other one has been anti-triggered.
