every once in a while this happens to levels that I have converted

It's your graphics card / or DirectX.

If you have a Voodoo you should change your card to an NVidia based card - Voodoo cards are not well supported.

Make sure your graphic card drivers are up to date.

Try switching off z-buffering / fog etc to see if that reduces it. Also, check that you are not running in 32-bit if you have a 16-bit card.

As a last resort, try installing DirectX 8.0. It works fine on my system but it is a major upgrade and may destroy your system because it is a Microsoft product.
